Yummy chocolate mud cake with dark chocolate ganache

I made this mud cake for a friend, and oh gosh, it was the most delicious mud cake we’d ever devoured. The cake in the photo below may not appear neat… but trust me, it tasted amazing. I topped the cake with strawberries, and also left it to cool in the fridge overnight (tasted even better the next day!)

Ingredients:

Cake mixture
– 220g unsalted butter
– 220g dark chocolate
– 6 tsp instant coffee granules
– 2/3 cup water
– 1/2 cup self-raising flour
– 1/2 cup plain flour
– 1/4 cup cocoa powder
– 1/2 tsp bicarb soda
– 2 cups caster sugar
– 4 eggs
– 7 tsp vegetable oil
– 1/2 cup buttermilk

Ganache
– 250g dark chocolate
– 1/3 cup thickened cream

Stir the butter, chocolate, coffee granules and water in a saucepan over low heat until melted. In a separate bowl, sift the flours, cocoa, sugar, and bicarb soda together. Whisk together the eggs, oil and buttermilk in another bowl till combined.
Pour the cooled chocolate mixture into the egg mixture and whisk to combine.
Mix the chocolate/egg mixture into a well in the flour mixture.
Pour the cake mixture into a greased, lined cake tin.
Bake at 160°C for about 1 hour 45 minutes. Leave to cool.

You can cover the cake in dark chocolate ganache. To prepare the ganache, mix the dark chocolate and thickened cream over low heat until melted and combined. Leave the ganache to cool before covering the cake.
