It’s summer here in Australia! This photo was taken at the beach on an island that I live on.
So my goal for today was to catch up on studying after uni, but here I am procrasti-baking. Again. And now I’m sharing my recipe for summer fruits muesli biscuits with my inter-web peeps.
Makes 20 biscuits.
Ingredients:
- 1 2/3 cup plain flour
- 2/3 cup caster sugar
- 1 tsp vanilla essence
- 1 cup muesli with dried summer fruits
- 1 tsp baking powder
- 1 egg
- 150g melted butter
Mix melted butter and the egg together. Then add in the plain flour, caster sugar, muesli, vanilla essence and baking powder. Roll the mixture into small balls and place on a greased baking tray. Cook in an oven at 180°C for about 15 minutes. Leave to cool and sprinkle some cinnamon sugar on top. It’s that easy!
